Ingredients
For the strawberry syrup/juice
½ pint of strawberries
2 tbsp orange juice
1 tbsp sugar
1-2 tablespoons orange flavored liqueur
8 oz mascarpone cheese, room temperature*
1 cups chilled whipping cream
1/4 cup sugar
1 teaspoon vanilla extract
1/2 pint strawberries
12 (about) crisp ladyfingers (Savoiardi)**
½ chocolate chips (optional)
6 custard cups or small glass jars
Instructions
For the Syrup - Roughly chop the strawberries and put in a small pan with the orange juice and sugar. Bring to a simmer, stirring now and then. Simmer for a couple of minutes and mash the strawberries to release their juices. Strain the mixture into a small bowl. Stir in the liqueur adding 1-2 tablespoons to taste.
Using electric mixer, beat cream, sugar, vanilla, in a large bowl to soft peaks. In a small bowl stir 1/4 of whipped cream mixture into mascarpone to soften the cream cheese. Fold that into remaining whipped cream.
Hull and slice the strawberries.
Break the ladyfingers into small pieces that will fit in your glass cups or jars
Line up your ingredients and your glass jars.
Follow these steps
1. dip the pieces of ladyfingers in the syrup mixture and place one layer of ladyfingers on the bottom of the cup
2. put a layer of the mascarpone mixture over the ladyfinger pieces.
3. top with a slice or two of strawberry
4. repeat until you reach the top of cup ending with mascarpone
5. top with chips or a berry slice
Place the finished tiramisu in the refrigerator until ready to eat. May be made up to 24 hours before serving.
Tip : If you make extra syrup you can roll the rim of the glasses in the syrup and then in sugar for a nice effect.
*you can use plain cream cheese. Just do not use the whipped kind.
** If you can only find the soft ones leave them out of the package over night or dry them at a low temperature in your oven
