Pastiera Di Grano
2 prepared Food processor pie crusts

or any one you want to use
1 ½ to 2 cups cooked farro grain (I like to cook mine in milk with a tablespoon of sugar)
3 cups good quality Ricotta cheese - see ricotta post http://themixingspoon.weebly.com/blog/category/ricotta
1 ½ cups sugar
6 egg yolks beaten
1 tablespoon orange zest
4 egg whites beaten until stiff
Preheat oven to 350 degrees.
Line two 8 inch pie pans with crust. Place in refrigerator while you make the filling.
Beat ricotta and sugar together; add egg yolks, orange zest and blend well. Stir in the farro and then gently fold in egg whites. Bake 30 to 40 minutes until filling is firm in the center.
