The smoked salt in this recipe adds a whole new level of flavor to the mild white anchovies. The roasted garlic is sweet and less overpowering than raw garlic. And lastly the Meyer lemons; they are sweeter than conventional lemons because they are a cross between a true lemon and an orange. The brightness of their taste combined with the fish and garlic creates a complex taste experience.
White anchovies with Meyer Lemon and Smoked Salt
½ cup good quality olive oil
zest of 1 Meyer lemon - reserve 1 teaspoon
juice of 1 Meyer lemon
6 parsley sprigs, leaves removed and coarsely chopped
4 roasted garlic cloves, mashed
12 white anchovies in oil
smoked salt to finish ( to taste)
smoked pepper to finish (to taste and optional)
Strain the oil the anchovies were packed in.
Mix the first five ingredients together.
Pour the mixture over all the anchovies and let marinate 4-6 hours.
Place anchovies in a serving plate with the marinade and sprinkle with the smoked salt, pepper and the reserved lemon zest.
Serve cold or at room temperature with a nice crusty bread.
