My starfruit tree produces hundreds of large, ripe, beautiful fruits twice a year. We were juicing them and that was good. But starfruit jam is way more useful and lasts much longer. The thyme addition goes great with meats and fish (see the roasted bone marrow in this blog http://themixingspoon.weebly.com/1/post/2013/11/roasted-marrow-bones.html ) and mild cheeses. The jalapeno addition goes very well with cream cheese, sharp cheeses, chicken wings and as a dip for fried shrimp.
Prepare the fruit by slicing off the brown or green pointed edges and then slicing lengthwise, removing the seeds and any white parts from the center. Chop the fruit place in a bowl or measuring cup and gently press to release some of the juices but do not completely mash it up.
Thirty Minute Freezer Starfruit Jams
For every 8 oz of jam you will need
1 2/3 cup prepared fresh star fruit
Ball brand instant pectin
2/3 cup sugar
optional- 8 – 10 sprigs of thyme leaves removed or ½ to 1 whole jalapeno chopped, including the seeds
Stir the sugar and pectin in a medium bowl. Add the fruit and stir for a full 3 minutes. Ladle jam into clean freezer safe containers. Let sit for 30 minutes.
Then keep in the refrigerator for up three weeks or freeze it up to a year.
